It is one of the most delicious examples of blending Portuguese colonial pastry techniques with local ingredients from Cabo Verde. Grated coconut gives the cake a moist texture.

Ingredients

  • 2 cups finely sifted cornmeal
  • 1 cup wheat flour
  • 1 cup granulated sugar
  • 1 cup grated coconut
  • 3 eggs
  • 100g melted butter
  • 1 cup milk
  • 1 tablespoon baking powder

Preparation

  1. Whisk the eggs and sugar in a deep bowl until creamy.
  2. Add the melted butter and milk, and continue to mix.
  3. Add the cornmeal, wheat flour, coconut, and baking powder to obtain a homogeneous batter.
  4. Pour into a greased cake pan and bake in a preheated oven at 180 degrees for about 40 minutes until golden brown.
