The most important feature of the dish is the perfect balance of the consistency of cornmeal and beans. Although ingredients vary across other islands in Cabo Verde, the authentic local recipe is characterized by the intense flavor of chouriço sausage.

Ingredients

  • 500g dried beans or fresh kidney beans
  • 2 cups fine cornmeal
  • 150g chouriço (Portuguese sausage), sliced
  • 1 large onion, chopped
  • 2 cloves garlic, crushed
  • 2 tablespoons olive oil or local fat
  • Salt, black pepper, and bay leaf

Preparation

  1. Boil the beans with a bay leaf in plenty of water until tender.
  2. In a separate pot, sauté the onion, garlic, and sliced chouriço sausages in olive oil.
  3. Add the boiled beans along with their cooking water to the sautéed mixture and season with spices.
  4. While the mixture is boiling, slowly add the fine cornmeal, stirring constantly, and let it simmer on low heat until it reaches a rice-like consistency.
