Ingredients

  • 500g cleaned beef tripe
  • 200g macaroni pasta
  • 1 celery stalk, 1 carrot, 1 onion
  • 50g grated Parmigiano Reggiano
  • Olive oil and meat broth
  • Salt and black pepper

Preparation

  1. Finely chop the vegetables and sauté them in olive oil.
  2. Add the tripe cut into strips and cook until its liquid evaporates.
  3. Pour in the meat broth and simmer on low heat for about 2 hours until the tripe is completely tender.
  4. Cook the macaroni separately, combine with the tripe soup, and serve hot with a generous dusting of cheese.
