Completely different from the usual soup tarhana, Sweet Tarhana is consumed as a winter dessert or snack in Kurucasile culture. It is prepared by drying starch, milk, and sugar or molasses. For local market locations, view the Harita section. This is a very rare starch dessert in Turkiye.
Ingredients
- 1 cup wheat starch
- 2 cups milk
- 1 cup mulberry or grape molasses
- 1 cup water
- Half a cup of crushed walnuts
Preparation
- Crush the starch with water and milk in a pot until it is smooth.
- Add the molasses and cook by stirring continuously until it thickens.
- Spread the thickened dessert in a thin layer on a greased tray.
- Sprinkle walnuts on top, leave to cool, and then slice to serve.
