Tandoor Bread, an ancient tradition, is produced by women co-operatively in almost every neighborhood and village of Kozluk district. The bread, cooked by sticking to clay walls in the embers of a wood fire, gains a unique aroma. Ingredients
- 1 kg whole wheat flour
- 1 pack of fresh yeast
- 1 tablespoon of salt
- Warm water (as much as needed)
- 1 teaspoon of yogurt (for brushing)
Preparation
- Put the flour in a large bowl, open the center, add yeast, salt, and warm water, and knead a soft dough.
- Cover the dough with a clean cloth and leave to ferment for about 1 hour.
- Make large balls from the fermented dough and shape them oval and flat with your hand.
- Brush a small amount of diluted yogurt on it and stick it to the inner wall of the pre-heated hot tandoor.
- Cook until browned and remove it from the wall with a tandoor iron tool.
