In traditional Kozluk cuisine, stuffed kibbeh is usually cooked by boiling to obtain a light and authentic texture. A generous amount of local butter, minced meat, and crushed walnuts are used in the filling. Ingredients
- 2 cups of fine bulgur for kibbeh
- 1 cup of cracked wheat (yarma)
- 300 g fat-free minced beef (for the shell)
- 400 g medium-fat minced beef (for the filling)
- 3 onions
- 100 g butter
- 1/2 cup of walnuts
- Salt, allspice, black pepper
Preparation
- For the filling, sauté the minced meat, add finely chopped onions. Add spices, butter, and walnuts, then freeze until firm.
- For the outer dough, soak bulgur and cracked wheat with warm water, add raw minced meat and salt, then knead until a paste forms.
- Take walnut-sized pieces from the dough and hollow them out thinly with your finger.
- Put the frozen filling inside and seal the top into a lemon shape.
- Boil in boiling salted water until the kibbeh floats to the top, then serve hot.
