Cuisine

Kaiserschmarrn is a shredded pancake specialty that holds a special place in the hearts of hikers in South Tyrol. Fluffy, caramelized, and dusted with powdered sugar, it showcases the strong Austro-Hungarian historical ties woven into the gastronomy of northern Italy.

Ingredients

  • 150g flour
  • 250ml milk
  • 4 eggs (separated into yolks and whites)
  • 30g sugar
  • A handful of raisins (optional)
  • Powdered sugar and lingonberry jam

Preparation

  1. Whisk the flour, milk, sugar, and egg yolks together until a smooth batter forms.
  2. Beat the egg whites in a separate bowl until stiff peaks form, then gently fold into the batter.
  3. Pour into a hot pan with melted butter, scatter raisins on top, and cook until the bottom is golden.
  4. Flip the pancake over, then use two forks to tear it into bite-sized pieces while it finishes cooking.
