Cuisine

The stems of the gathered kaldirik herbs are cleaned, boiled, and then sautéed with plenty of onions and eggs. It is the crown jewel of village breakfasts, especially in Gölyaka district. Ingredients

  • 1 kg fresh kaldirik herb
  • 2 medium onions
  • 3 eggs
  • 2 tablespoons of butter
  • 1 teaspoon of red pepper flakes
  • Salt

Preparation

  1. Wash the stems of the kaldirik herbs thoroughly and chop them into finger-width pieces.
  2. Boil in salted boiling water until soft, then drain and rinse with cold water.
  3. Sauté finely chopped onions in butter in a large pan and add the boiled herbs.
  4. When the herbs blend with the onions, crack the eggs over them, add salt and red pepper flakes, and stir until the eggs are cooked.
