Cuisine

Made by wrapping rice pilaf prepared with partridge or rooster meat, enriched with almonds and pine nuts, into a dough curtain, this dish has a deep meaning in Eruh culture. Ingredients

  • Dough made of flour
  • Partridge or chicken meat
  • Baldo rice
  • Peeled almonds
  • Pine nuts and currants

Preparation

  1. A thin dough is rolled out with flour, egg, and oil, placed at the bottom of the greased mold, and almonds are arranged.
  2. A semi-cooked rice pilaf is prepared with boiled meat, pine nuts, and currants.
  3. The prepared pilaf is filled into the dough-lined mold and covered with dough.
  4. It is baked over a wood fire or in the oven until the dough is completely browned, then turned upside down and served.
