  • 3 tbsp wine vinegar and 1 tbsp sugar
  • Olive oil, salt, and pepper

Preparation

  1. Dice the aubergines and fry them in olive oil until golden, then set aside.
  2. In a separate pan, sauté chopped onion, garlic, and celery until soft.
  3. Add tomato puree, capers, and olives, letting the sauce simmer for 10 minutes.
  4. Stir in the fried aubergines, vinegar, and sugar, simmering for a few minutes to develop the sweet-and-sour flavor.
