Ingredients

  • 200g flour, 30g sugar, 30g butter (for the dough)
  • 50ml Marsala wine
  • 500g fresh sheep's milk ricotta
  • 150g icing sugar
  • Chopped pistachios and chocolate chips
  • Oil for deep frying

Preparation

  1. Knead flour, sugar, butter, and Marsala wine into a firm dough, then roll it out very thinly.
  2. Cut into circles, wrap around metal cannoli tubes, and deep fry until crispy and golden.
  3. Whisk the ricotta with icing sugar until smooth and creamy, then place in a piping bag.
  4. Pipe the cream into the cooled pastry shells just before serving, and garnish the ends with pistachios.
