Ingredients

  • 500g Arborio rice
  • 1 liter beef or vegetable broth
  • 100g grated Parmesan cheese
  • 150g mozzarella cheese (diced)
  • 200g ragù meat sauce
  • 2 eggs
  • Breadcrumbs and oil for frying

Preparation

  1. Cook the Arborio rice in the broth until fully absorbed, then mix in Parmesan and let it cool.
  2. Take a handful of cooled rice and form a well in the center using your thumb.
  3. Fill the center with ragù and a cube of mozzarella, then carefully shape into a ball or cone.
  4. Coat the rice balls first in beaten eggs, then in breadcrumbs, and deep fry in hot oil until golden brown.
