One of the most authentic reflections of Trabzon maritime culture, Hamsili Pilav is made by baking fresh anchovies with a seasoned rice filling. It can be easily found in city restaurants during winter with map guidance.

Cuisine

Anchovy, the symbol of Black Sea cuisine, combines with rice in Trabzon to turn into a magnificent flavor. Cleaned anchovies are lined up in a baking dish, filled with seasoned rice containing currants, pine nuts, and spices, covered again with anchovies, and baked.

Ingredients

  • 1 kg fresh anchovies (deboned)
  • 1.5 cups of rice
  • 1 onion
  • 1 tablespoon of currants
  • 1 teaspoon of dried mint and allspice

Preparation

  1. Finely chop the onions and sauté until translucent, then add rice, currants, and spices to prepare the filling.
  2. Grease a baking dish and arrange the deboned anchovies with their backs facing down.
  3. Spread the prepared seasoned rice evenly over the arranged anchovies.
  4. Cover the rice completely with the remaining anchovies and bake until golden brown.
