Cuisine
Anchovy, the symbol of Black Sea cuisine, combines with rice in Trabzon to turn into a magnificent flavor. Cleaned anchovies are lined up in a baking dish, filled with seasoned rice containing currants, pine nuts, and spices, covered again with anchovies, and baked.
Ingredients
- 1 kg fresh anchovies (deboned)
- 1.5 cups of rice
- 1 onion
- 1 tablespoon of currants
- 1 teaspoon of dried mint and allspice
Preparation
- Finely chop the onions and sauté until translucent, then add rice, currants, and spices to prepare the filling.
- Grease a baking dish and arrange the deboned anchovies with their backs facing down.
- Spread the prepared seasoned rice evenly over the arranged anchovies.
- Cover the rice completely with the remaining anchovies and bake until golden brown.
