Cuisine

Having an important place in the culture of Yozgat, Pottery Kebab is traditionally made with lamb meat blended with vegetables and garlic inside a single clay pot. The mouth of the pot is sealed with dough, cooked over low heat for hours, and broken in front of the guests during service. You can check the local restaurants on the Map to experience this ritual. Ingredients

  • 1 kg cubed lamb meat
  • 100 g tail fat
  • 15-20 cloves of garlic
  • 4 tomatoes
  • 6 green peppers
  • 1 tablespoon of butter
  • Salt and black pepper

Preparation

  1. Mix the meat, peeled garlic, chopped peppers, and tomatoes with salt and black pepper.
  2. Place the ingredients in layers inside the traditional clay pot specific to Yozgat.
  3. Put butter and tail fat on top, then seal the mouth of the pot with a dough made of flour and water.
  4. Open a small air hole in the middle of the dough and leave it to cook on oak charcoal embers for about 2-3 hours.
