Cuisine

As one of the most characteristic elements of Yozgat culinary culture, Arabasi is more than just a soup. The cold dough, cooked with flour, water, and salt and frozen in trays, is cut into diamond shapes. It is swallowed with a spoon by dipping it into the hot, spicy chicken soup served alongside. You can explore the places where you can taste this traditional flavor on the Map. It differs from other Arabasi types in Türkiye due to its dough consistency and flour roasting technique.

Ingredients

  • 1 whole chicken (or turkey)
  • 2 tablespoons of flour (for soup)
  • 2 tablespoons of butter
  • 1 tablespoon of pepper paste
  • Red pepper flakes, black pepper, salt
  • 5 cups of flour (for dough)
  • 1 liter of water (for dough)

Preparation

  1. For the dough, boil flour, water, and salt until it reaches a thick pudding consistency, then pour onto trays and cool in the fridge.
  2. For the soup, boil the chicken and shred the meat into small pieces.
  3. In a separate pot, roast the flour in butter, add pepper paste and spices, and boil with the chicken broth.
  4. Add the shredded chicken to the soup; serve the soup hot and the dough cold.
