Black cabbage soup is one of the cornerstones of Yigilca cuisine. Enriched with local kidney beans and cracked corn, the soup is consumed to keep the body warm in cold weather conditions. Ingredients
- 1 bunch of fresh black cabbage
- 1 cup of boiled kidney beans
- 1 tea glass of cracked corn
- 1 onion
- 2 tablespoons of butter
- 1 tablespoon of hot pepper paste
- Hot water and salt
Preparation
- Black cabbages are washed, finely chopped, lightly boiled and drained to remove their bitter juice.
- Butter is melted in a pot and chopped onions are sautéed until pink.
- Pepper paste is added and sautéing continues, then hot water is added.
- Cabbages, boiled kidney beans and cracked corn are added to the boiling water and cooked until the corn is soft.
