Cuisine

Seadas (or Sebadas) is the most beloved sweet finale of Sardinia traditional gastronomy. Resembling a large ravioli, this pastry features slightly melted fresh sheep's milk cheese (Pecorino) flavored with grated lemon zest. Fried until golden brown, it is drizzled while hot with the island's famous bitter strawberry tree honey. It stands out as a unique dessert within Italia. Ingredients

  • 300g Durum wheat flour
  • 50g Lard or butter
  • 300g Fresh sour Pecorino cheese
  • Zest of 1 lemon
  • Oil for frying and pure honey

Preparation

  1. Prepare a smooth pastry dough with flour, fat, and warm water, then roll it out thinly.
  2. Melt the fresh cheese gently, mix it with lemon zest, and let it cool in small discs.
  3. Cut circles from the dough, place the cheese disc in the middle, cover with another dough layer, and seal the edges tightly.
  4. Fry in abundant hot oil until golden brown and serve immediately drenched in warm honey.
