Cuisine

Culurgiones is the most famous pastry in Sardinia cuisine. This special pasta is made by filling a wheat flour dough with a mixture of boiled potatoes, pecorino cheese, mint, and garlic. The sealing shape resembles an ear of wheat. It is traditionally served across Italia with simple tomato sauce and extra grated cheese. Ingredients

  • 250g Durum wheat flour
  • 150ml Warm water
  • 500g Boiled potatoes
  • 100g Grated Pecorino Sardo cheese
  • Fresh mint leaves and garlic

Preparation

  1. Mix flour and water to knead a smooth dough and let it rest.
  2. Mash the boiled potatoes, mix with cheese, finely chopped mint, and garlic to prepare the filling.
  3. Roll out the dough thinly and cut into circular discs.
  4. Place the filling in the center and fold the edges into a wheat-ear shape, then boil in salted water.
