Scazzetta, the masterpiece of pastry shops in the historical center of Salerno, takes its name from its resemblance to the red hat (galero) worn by Catholic bishops. It features special pastry cream and fresh wild strawberries between soft sponge cake layers. The top is covered with a bright red strawberry glaze.   • Sponge cake
  • Pastry cream (Crema pasticcera)
  • Fresh wild strawberries
  • Strawberry liqueur (for soaking)
  • Red strawberry glaze or gel

Preparation

  1. Cut the sponge cake into layers with rounded profiles.
  2. Lightly soak the cake layers with a mixture of strawberry liqueur and sweetened water.
  3. Spread plenty of pastry cream between the layers and place the fresh strawberries.
  4. After coating the outside smoothly, pour red strawberry glaze over it to complete the dome shape.
