Cuisine

An undisputed masterpiece of Saxony-Anhalt cuisine, Baumkuchen is prepared by baking thin layers of batter one by one on a spit turning over an open fire. Looking at the Map towards the town of Salzwedel in the north, one can find the birthplace of this dessert.

Because its interior resembles tree rings when sliced, it is called "Tree Cake". It is a delicacy frequently consumed on special occasions in bakeries throughout Deutschland.

Ingredients

  • 250g butter
  • 250g sugar
  • 1 tsp vanilla extract
  • 6 eggs
  • 150g flour
  • 100g cornstarch
  • Chocolate glaze for coating

Preparation

  1. Beat butter, sugar, and vanilla until creamy.
  2. Add egg yolks one by one into the mixture.
  3. Sift flour and cornstarch, and gently fold into the wet mixture.
  4. Beat egg whites into stiff peaks in a separate bowl and fold them into the batter without deflating.
  5. Bake in thin layers one on top of the other using a rotating spit or an oven broiler.
  6. Once cool, coat completely with chocolate glaze.
