Ingredients
- 500g low-fat sour milk quark
- 1 tsp baking soda
- 1 tsp salt
- 1 tbsp caraway seeds
- For marinade: Olive oil, vinegar, and red onion
Preparation
- Squeeze the quark thoroughly using a clean cheesecloth to drain the whey.
- Add salt, baking soda, and caraway seeds, and knead the mixture.
- Pinch off small pieces of the mixture and shape them into flat discs or small cylinders (Rolle).
- Place the cheeses on a wooden board, cover with a cloth, and let them ripen at room temperature for 3-4 days.
- Serve the ripened cheese by soaking it in a dressing made of sliced red onions, oil, and vinegar.
