Ingredients

  • 500g low-fat sour milk quark
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tbsp caraway seeds
  • For marinade: Olive oil, vinegar, and red onion

Preparation

  1. Squeeze the quark thoroughly using a clean cheesecloth to drain the whey.
  2. Add salt, baking soda, and caraway seeds, and knead the mixture.
  3. Pinch off small pieces of the mixture and shape them into flat discs or small cylinders (Rolle).
  4. Place the cheeses on a wooden board, cover with a cloth, and let them ripen at room temperature for 3-4 days.
  5. Serve the ripened cheese by soaking it in a dressing made of sliced red onions, oil, and vinegar.
