Cuisine

Bruscitti is a historical dish unique to the Varese area, consisting of finely chopped beef slow-cooked for hours with fennel seeds and wine. Traditionally served with warm polenta during winter, it showcases the hearty rural culinary heritage of northern Italia.

Ingredients

  • 500g beef (finely minced)
  • 50g butter
  • 1 teaspoon fennel seeds
  • 1 cup red wine
  • 300g polenta cornmeal
  • Salt and pepper

Preparation

  1. Melt the butter in a pot and add the finely minced beef.
  2. Add the fennel seeds, salt, and pepper, and cook over low heat in its own juices.
  3. Once the juices evaporate, pour in the red wine, cover, and simmer on very low heat for about 2 hours.
  4. Prepare the polenta with hot water in a separate pot and serve the beef on top of the hot polenta.
