Ingredients

  • 150g fine cornmeal
  • 100g wheat flour
  • 150g butter (room temperature)
  • 150g sugar
  • 100g ground almonds
  • 3 eggs
  • 1 packet of baking powder
  • Lemon zest

Preparation

  1. Cream the butter and sugar together until light and fluffy.
  2. Add the eggs one by one, beating well after each addition.
  3. Fold in the cornmeal, wheat flour, ground almonds, and baking powder.
  4. Add the lemon zest, pour into a traditional ridged Varese mold, and bake at 180°C for 40 minutes.
