Cuisine

A spinach-based sour soup, Pirtike is very frequently cooked in Siirt home kitchens. It is cooked by adding rice, tomato paste, and sumac juice unique to the region. It differs from spinach soups in different regions of Türkiye with its intense sour aroma and consistency.

Ingredients

  • 500 g fresh spinach
  • 1 tea glass of rice
  • 1 onion
  • 1 tablespoon of tomato paste
  • 2 tablespoons of sumac grains (soaked in water)

Preparation

  1. Onions are chopped and roasted in vegetable oil until pink, then tomato paste is added.
  2. Thoroughly washed and finely chopped spinach is added to the pot and allowed to wilt.
  3. Hot water and washed rice are added, and cooked until the rice is tender.
  4. Finally, the strained sumac sour water is added to the soup, boiled for one more rolling boil, and served hot.
