Cuisine

Baked in special fez-shaped copper pots, perde pilaf is the grandest dish offered to guests in Pervari. It reflects the richness of Siirt cuisine with almonds and pine nuts in its filling. You can check the Harita section to see where to find it.

Ingredients

  • Partridge, rooster, or chicken meat
  • Baldo rice
  • Peeled almonds and pine nuts
  • Currants and allspice
  • Dough pastry (flour, egg, butter)

Preparation

  1. Partridge or chicken meat is boiled and shredded.
  2. A parboiled pilaf is prepared with rice, almonds, pine nuts, and spices.
  3. The inside of a special copper pot is greased with butter, decorated with almonds, and lined with dough.
  4. The pilaf and meat are filled into the dough and baked until golden brown.
