The symbol of the historic Hanseatic city of Lübeck in the Schleswig-Holstein state, Lübecker Marzipan is known for its exceptional quality. Unlike standard marzipan, its sugar content is kept very low, and it is prepared using intense high-quality sweet and bitter almonds.

Dating back to the Middle Ages trade, this delicacy is traditionally obtained by roasting in copper cauldrons. You can visit the marzipan museums and cafes in the historic city center with the help of the Map and enjoy fresh marzipan.

Ingredients

  • 300g blanched raw sweet almonds
  • 5-6 bitter almonds
  • 150g fine caster sugar or powdered sugar
  • 1-2 tablespoons of rose water
  • Optional: Melted dark chocolate for coating

Preparation

  1. Blanch the almonds in boiling water for a few minutes, peel them, and lay them out to dry completely.
  2. Grind the dried almonds in a food processor until they are a smooth flour.
  3. Combine the ground almonds, powdered sugar, and rose water, and knead into a dough.
  4. Transfer the dough to a heavy-bottomed pan and roast over low heat, stirring constantly, until the sugar melts and it thickens.
  5. Let it cool, then shape it into a loaf by hand and, if desired, dip it in chocolate and let it rest.
