A special pastry with rich filling baked in traditional stone ovens or over embers in the countryside of Beytüşşebap. It is one of the symbols of Şırnak culture.

Cuisine

Hevra, which is especially served at breakfast and during special guest hospitality, is known for its thick dough and satisfying filling. Fresh cheeses and herbs produced in Beytüşşebap plateaus are placed inside the dough. This bread variety, slowly baked over a wood fire, differs from other pastries in Türkiye with its baking technique. You can look at the Harita section for coordinates.

Ingredients

  • 5 cups of wheat flour
  • 1 pack of fresh yeast
  • 2 cups of warm water
  • 200 g Beytussebap herbed cheese
  • 1/2 cup of melted butter and salt

Preparation

  1. Flour, yeast, salt, and warm water are mixed to knead a dough of earlobe consistency and left to ferment.
  2. The fermented dough is divided into two equal pieces and rolled out thickly with a rolling pin.
  3. Melted butter is spread on the first layer of dough and crumbled herbed cheese is sprinkled.
  4. The second layer of dough is placed on top, the edges are tightly closed, and it is baked in the oven until golden brown.
