Cuisine

Prepared collectively, especially on cold winter nights, this dessert has an important social place in Hasanbeyli culture. Although this flavor, obtained by boiling sugar to the exact consistency and kneading it in cold air, resembles the pishmaniye types in the Osmaniye region, it differs with its hardness in making and local aroma. This tradition is still continued in old mansions in the Harita area.

Ingredients

  • 3 cups of granulated sugar
  • 1 cup of water
  • 2 cups of wheat flour
  • 1 teaspoon lemon salt
  • 50 g butter

Preparation

  1. Wheat flour is lightly roasted with butter in a pan until fragrant and left to cool in Hasanbeyli homes.
  2. Sugar, water, and lemon salt are boiled to a thick syrup consistency and shaped into a ring on cold marble.
  3. The ring-shaped syrup is placed into the roasted flour, pulled continuously by several people, enlarged, and folded.
  4. According to Osmaniye traditions, this process is continued until the syrup absorbs all the flour and separates into strands, then it is served.
