Cuisine
Made by cooking hand-rolled thin dough on a traditional griddle (sac), sikma is one of the most practical and delicious heritages of Hasanbeyli Yörük culture. Its filling generally consists of curd cheese, finely chopped onion, parsley, and chili flakes. The cheese, melting with the heat of the hot bread, combines with Osmaniye olive oil to turn into one of the most delicious breakfast wraps in Türkiye.
Ingredients
- 3 cups flour
- 1 teaspoon salt
- 1.5 cups warm water
- 200g curd or cottage cheese
- 1 onion
- Butter and chili flakes
Preparation
- Mix flour, water, and salt to get a soft dough, divide into balls, and let it rest.
- For the filling, chop the onion finely and mix with cheese, chili flakes, and melted butter.
- Roll out the dough balls into thin flatbreads using a rolling pin and cook on a hot griddle.
- Put the cheese filling inside the hot flatbread straight from the griddle, roll it tightly, and serve.
