Ingredients

  • 1 kg strained yogurt
  • 1 cup cracked wheat (yarma)
  • 1 egg
  • 1 tablespoon flour
  • Local wild mint or mountain beet greens
  • Salt and water

Preparation

  1. Soak the cracked wheat overnight and boil it in plenty of water until soft.
  2. In a large pot, whisk the strained yogurt, flour, egg, and water until completely smooth.
  3. Bring the yogurt mixture to a boil while stirring constantly, then add the cooked wheat.
  4. As the soup thickens, add finely chopped local mountain herbs and salt, then simmer on low heat.
