The sweet face of Saxony's culture, Eierschecke consists of a yeast dough base, a middle quark (fresh cheese) layer, and a top layer of vanilla pudding mixed with egg yolks. It stands as one of the most special examples of Germany's traditional baking history.

Ingredients

  • 250g flour (for the base)
  • 15g fresh yeast
  • 500g quark cheese
  • 1 packet vanilla pudding powder
  • 4 eggs (separated)

Preparation

  1. Make a soft dough from flour and yeast, spread it on a tray and let it rest.
  2. Prepare the middle layer with quark, sugar, and some egg, then spread it over the base.
  3. Cook and cool the vanilla pudding, mix in the egg yolks.
  4. Whip the egg whites stiff and fold them into the pudding mixture gently, then pour on top.
  5. Bake in a preheated oven at 175°C for about 45-50 minutes.
