The sweet face of Saxony's culture, Eierschecke consists of a yeast dough base, a middle quark (fresh cheese) layer, and a top layer of vanilla pudding mixed with egg yolks. It stands as one of the most special examples of Germany's traditional baking history.

Ingredients
- 250g flour (for the base)
- 15g fresh yeast
- 500g quark cheese
- 1 packet vanilla pudding powder
- 4 eggs (separated)
Preparation
- Make a soft dough from flour and yeast, spread it on a tray and let it rest.
- Prepare the middle layer with quark, sugar, and some egg, then spread it over the base.
- Cook and cool the vanilla pudding, mix in the egg yolks.
- Whip the egg whites stiff and fold them into the pudding mixture gently, then pour on top.
- Bake in a preheated oven at 175°C for about 45-50 minutes.
