Cuisine

Chisciöly has deep roots in the villages surrounding Sondrio. While sharing similar ingredients with Sciatt, it is uniquely prepared flat in a skillet. It remains a staple comfort food in the historic inns of Italia's Alpine valleys.

Ingredients

  • 150g Buckwheat flour
  • 50g All-purpose flour
  • 150g Local Casera or Bitto cheese
  • 150ml Beer or sparkling water
  • Butter or oil for frying

Preparation

  1. Whisk the buckwheat and white flour with beer or sparkling water until it forms a smooth batter.
  2. Slice the cheese thinly and fold it gently into the pancake batter.
  3. Heat butter or oil in a pan and pour a ladle of batter to cover the bottom.
  4. Fry on medium heat on both sides until the cheese melts and the crust turns crispy brown.
