As in the wider Batman region, Kutulk is the crown jewel of dining tables in the Beşiri district and an indispensable part of special occasions due to its laborious preparation. Usually served with ice-cold ayran, this dish can be experienced in local restaurants located near the Map section and central eateries.
Ingredients
- 500g fine bulgur for meatballs
- 300g lean minced meat (for dough)
- 500g medium-fat minced meat (for filling)
- 3 medium onions
- 1 tablespoon pepper paste
- Red pepper flakes, black pepper, salt
Preparation
- For the filling, finely chop the onions and sauté them with the minced meat, add pepper paste and spices, then leave to cool.
- Knead the bulgur, lean minced meat, and salt thoroughly with water until it reaches a paste-like consistency.
- Take walnut-sized pieces from the dough and hollow them out thinly with your finger.
- Fill with the cold stuffing, seal the edges into a round or flat shape, and boil in rolling salted water.
