With historical roots based on the hunting and rural culture around Aydos Castle, roasted lamb is one of the most prestigious main dishes of the Sultanbeyli restaurant sector today. Contrary to modern cooking techniques across Istanbul, meats in this region are marinated with fresh thyme branches and cooked in stone ovens for at least 4 hours over low heat. It is served with roasted peppers and onions in meat restaurants located near the bazaar in the district center, easily found with the help of the Map.

The most important feature of this dish is that the lamb meat is soft enough to separate into fibers. It is among the special recipes that meat lovers across Turkey definitely try when visiting the district.

Ingredients

  • 1.5 kg lamb shoulder or leg
  • 3 cloves of garlic
  • 1 tablespoon of olive oil
  • 1 teaspoon of fresh thyme
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of salt

Preparation

  1. Rub the lamb meat with garlic, olive oil, fresh thyme, salt, and black pepper, and marinate for at least 2 hours.
  2. Place the marinated meat in a cast-iron pot or baking tray and cover it tightly with greaseproof paper and aluminum foil so it is airtight.
  3. Bake in a preheated oven at 160 degrees for about 3.5 - 4 hours until the meat is tender enough to separate from the bone.
  4. Uncover for the last 15 minutes to let the top brown, and serve along with rice.
