Prepared in the recreation areas around Aydos Forests and Castle, the most prominent geographical symbols of the Sultanbeyli district, this special halva offers a unique harmony of roasted semolina and pine nuts. It differs from classic halva recipes throughout Istanbul with a touch of fresh wild thyme and organic strained honey sprinkled on top. It is widely consumed during winter months in the central market area, reachable via the Map.

The dessert is preferred after heavy meals, especially due to its light structure. Its milk and butter ratio is well-balanced, and it has a less sugary and moister consistency compared to other semolina halvas across Turkey.

Ingredients

  • 2 cups of semolina
  • 100 grams of butter
  • 2 tablespoons of pine nuts
  • 1.5 cups of milk
  • 1 cup of granulated sugar
  • 1 tablespoon of strained honey

Preparation

  1. Melt the butter in a large saucepan and add the pine nuts, roasting them until lightly golden.
  2. Add the semolina and continue to roast over low heat, stirring constantly for about 15-20 minutes until the color darkens.
  3. In a separate bowl, mix warm milk and sugar to ensure the sugar dissolves completely.
  4. Slowly pour the sugary milk mixture over the roasted semolina, cover the pan, and let it simmer over low heat until the liquid is fully absorbed.
