Cuisine

Consisting of yellow and white layers, Welfenspeise is the most exquisite dessert of Lower Saxony cuisine.

The bottom layer is a vanilla pudding, and the top is a wine cream. It was dedicated to the House of Welf in the history of Germany. Visit the Map section to find historic cafes where you can experience this dessert.

Ingredients

  • 500 ml milk
  • 1 packet vanilla pudding powder
  • 4 eggs (yolks and whites separated)
  • 4 tablespoons sugar
  • 250 ml white wine (preferably Riesling)
  • A little lemon juice

Preparation

  1. Prepare the bottom white layer by cooking milk and pudding powder with some sugar, then divide into bowls.
  2. Beat the egg whites until stiff and gently fold them into the vanilla mixture.
  3. Prepare the yellow wine cream by whisking wine, lemon juice, remaining sugar, and egg yolks over a double boiler.
  4. Carefully pour the thickened wine cream over the cooled vanilla base.
  5. Refrigerate the dessert for at least 2 hours and serve cold.
