Rayosh, an old syrup-soaked flour dessert unique to the Tillo region, is frequently cooked in homes, especially during winter months to provide energy. It is one of the lesser-known but most authentic dessert examples of Siirt culinary heritage.

Cuisine

Unlike semolina or flour halvas across Türkiye, this dessert is prepared with a thick molasses or sugar syrup poured over flour roasted to a special consistency. Crushed Tillo walnuts added to it double the flavor and nutritional value of the dessert.

Ingredients

  • 2 cups of wheat flour
  • 1 cup of pure grape molasses
  • 100 grams of butter
  • 1 cup of crushed walnuts
  • 1 cup of water (for syrup)

Preparation

  1. Melt the butter in a large pan, add the flour, and roast, stirring continuously until the color darkens.
  2. In a separate bowl, mix grape molasses and water, heating gently to create a syrup.
  3. Slowly pour the molasses syrup over the roasted flour and stir quickly to blend it in.
  4. When the dessert thickens and comes together, add the walnuts, shape, and serve hot or warm.
