The secret of authentic Sivas Meatballs lies in its simplicity and the quality of the meat. Minced meat obtained from a mixture of mutton and beef fed naturally in the highlands of Ulas is kneaded only with salt. No onions, bread, or spices are added. Ingredients
- 700 grams of minced beef rib meat
- 300 grams of minced mutton
- 1 tablespoon of rock salt
- Tomatoes and peppers for serving
Preparation
- Grind the beef and mutton, add only salt, and knead thoroughly for at least 20 minutes.
- Rest the kneaded mixture in the refrigerator for 24 hours.
- Knead the rested meat again, tear off tangerine-sized pieces, and shape them into thin patties using your palms.
- Cook on a barbecue lit with oak charcoal, turning frequently without drying out, and serve with roasted peppers.
