Cuisine

Resadiye Village Stew, which is popular especially on weekends in recreation areas and village restaurants within the borders of Çekmeköy, is blended with local agricultural products of the old village after which it is named. This region, a frequent destination for those looking for food cooked in a natural environment across İstanbul, is well known for its stew making. In the forest restaurants located on the Map, clay pots are sealed with dough and cooked over embers.

Cooking the lamb meat in its own juice with added fresh thyme gives the dish a unique tenderness. This flavor, which fully reflects the traditional stew cooking techniques of Türkiye cuisine, is enriched with local market vegetables.

Ingredients

  • 600 grams of cubed lamb meat
  • 2 eggplants
  • 2 tomatoes
  • 3 green peppers
  • 1 head of garlic
  • 1 tablespoon of butter
  • Fresh thyme, salt, and black pepper

Preparation

  1. Place the lamb meat at the bottom of the clay pot.
  2. Add the chopped eggplants, peppers, garlic cloves, and finally the diced tomatoes on top in order.
  3. Put pieces of butter and sprinkle fresh thyme, salt, and black pepper.
  4. Close the pot (optionally sealing it with dough) and cook over low wood fire or in the oven for about 2 hours until the meat becomes tender.
