Cuisine

Keledos is one of the most special heavy dishes with a geographical indication certificate in Van cuisine. It is prepared by long-cooking white beet herb, kurut (dried yogurt), lamb, and various legumes. Ingredients

  • Lamb Meat
  • Kurut (Dried Yogurt) or Strained Yogurt
  • White Beet (Keledos Herb)
  • Chickpeas and Green Lentils
  • Wheat Berries
  • Butter and Garlic

Preparation

  1. Boil the chickpeas, lentils, and wheat berries in advance until tender.
  2. Cook the lamb meat in its own juice until tender, then combine with the legumes.
  3. Add the specially dried white beet herb and mashed kurut (dried yogurt) into the mixture, then simmer over low heat until well blended.
  4. Pour melted butter with plenty of garlic and red pepper flakes on top and serve hot.
