It is prepared by long-cooking white beet herb, kurut (dried yogurt), lamb, and various legumes. - Kurut (Dried Yogurt) or Strained Yogurt
- White Beet (Keledos Herb)
- Chickpeas and Green Lentils
- Wheat Berries
- Butter and Garlic
Preparation
- Boil the chickpeas, lentils, and wheat berries in advance until tender.
- Cook the lamb meat in its own juice until tender, then combine with the legumes.
- Add the specially dried white beet herb and mashed kurut (dried yogurt) into the mixture, then simmer over low heat until well blended.
- Pour melted butter with plenty of garlic and red pepper flakes on top and serve hot.
