Himmel un Ääd, whose name means "Heaven and Earth", represents the apple (heaven) and the potato (earth) in the culture of North Rhine-Westphalia. Although there are different versions throughout Germany, the most original belongs to this region. It is frequently served in traditional brewery restaurants, which can also be found on the Map.
Mashed potatoes and apple compote are usually accompanied by fried blood sausage (Flönz) and crispy onion rings. It is one of the most preferred comfort foods of the residents of North Rhine-Westphalia on cold winter days.
Ingredients
- 500 g potatoes
- 500 g tart apples (e.g., Boskoop)
- 1 large onion
- 2 tablespoons of butter
- 1 ring of blood sausage (Flönz/Blutwurst)
- Salt, pepper, grated nutmeg
Preparation
- Peel, chop, and boil the potatoes in salted water.
- Peel the apples, core them, and cook them in a separate pot with a little water until they become a compote.
- Mash the boiled potatoes, add the apple compote, mix, and season with nutmeg.
- Slice the onions into rings and sauté them in butter until caramelized.
- Slice the blood sausage, fry it in a separate pan until crispy, and serve the mash with the onions and sausage.
