Cuisine

Although Fainè originally has Genoese roots, it has gained a completely unique identity in Sassari culture. It is prepared with a simple yet perfect combination of chickpea flour, water, olive oil, and plenty of black pepper. Baked at high temperatures in large copper pans in wood-fired ovens, Fainè develops a crispy crust and a soft interior. You can try plain, onion, or sausage variants in the bakeries of the historic center. Ingredients

  • 300 g chickpea flour
  • 1 liter water
  • 50 ml extra virgin olive oil
  • 1 teaspoon salt
  • Plenty of freshly ground black pepper

Preparation

  1. Put the chickpea flour in a deep bowl and whisk while adding water gradually to prevent lumps.
  2. Let the mixture rest at room temperature for at least 4-5 hours (ideally overnight) and remove any foam that forms on top with a spoon.
  3. Just before baking, add the olive oil and salt to the mixture and stir well.
  4. Pour into a thin layer in a preheated and greased large metal pan, then bake in an oven at 220°C until the top is golden and crispy; sprinkle with plenty of black pepper upon removal.
