Ingredients

  • 250g stale bread (cubed)
  • 150g Trentino speck or ham (cubed)
  • 2 eggs
  • 200ml warm milk
  • 1 tablespoon all-purpose flour
  • Finely chopped parsley and chives
  • Salt, black pepper, and nutmeg

Preparation

  1. Place the cubed bread in a large bowl, pour the warm milk over it, and let it soak for about 30 minutes to soften.
  2. In a separate bowl, mix the beaten eggs, diced speck, herbs, and spices, then add to the bread mixture.
  3. Add the flour and knead gently with your hands until a cohesive dough forms.
  4. Shape the mixture into small, tangerine-sized balls and simmer them in boiling meat broth for about 15 minutes.
