Ingredients

  • 1 kg lamb meat (cubed)
  • 750 ml dry white wine
  • 2 carrots
  • 1 orange peel
  • 100 g black olives
  • Herbes de Provence (thyme, rosemary)

Preparation

  1. Marinate the lamb meat overnight with white wine, sliced carrots, and herbs.
  2. Drain the meat and sear it in a heavy pot over high heat.
  3. Add the marinating liquid, orange peel, and black olives to the pot.
  4. Cover and simmer on low heat for at least 3 hours until tender.
