Traditionally made by cutting hand-rolled dough into small squares, Cansa Soup is the most authentic soup variety of Sindirgi cuisine. The soup is served by pouring mint and chili pepper heated in butter over it. It differs from other dough soups across Türkiye due to its intense use of green lentils.
Ingredients
- 1 cup green lentils
- 1 cup hand-rolled cut dough
- 4 cups bone broth
- 1 onion
- 2 tablespoons butter
- Dried mint and chili flakes
Preparation
- Wash the green lentils and boil them in bone broth until soft.
- In a separate pan, sauté the chopped onions in butter until pink and add to the soup.
- Add the cut dough to the boiling lentil water and cook until the dough is soft.
- Drizzle with mint and chili flakes heated in butter, and serve hot.
